Why I Say “F” to Regular Muffins

(No, it’s not a typo.)

Let’s be honest: most muffins suck.

Sure, sometimes the top has a moment… but most muffins are just bad cake. Empty calories. A quick hit of sugar that pretends to be breakfast.

I’ve never met a muffin I actually liked.
So naturally—I built a business around them.

I never set out to create a gluten-free dedicated bakery. I wanted to build a rad wellness bakery that could feed just about anyone. But as I kept testing recipes and turning morning cravings into healthier options, one question stuck with me:

Why don’t muffins have a higher purpose?

They should be the perfect vessel for a protein-packed, nutrient-dense power meal. Instead, what you see everywhere are dry sugar bombs—pre-frozen, stale, or made from preservative-laden batters that pretend to be “fresh-baked.”

So, I say F bad cake for breakfast.
We can do better.

I set out to create a muFin line that actually earns its place at the breakfast table—something that can compete with a grain bowl, a smoothie, or anything you’d call a “healthy start.”


How I Rebuilt the MuFin

I haven’t used white sugar in almost two decades. I reach for organic raw evaporated cane juice or alternatives like coconut sugar, monkfruit, maple, honey, and agave. They taste better, and they do more than just make things sweet.

I reduce the overall sugar by leaning on natural extracts, ripe fruit, oils, and savory techniques—fire, smoke, spice, vinegars. Approaching pastries like a cook means choosing ingredients that give back, not just bulk things up.


The Blanco: The Base That Started Everything

This is one of the most valuable recipes I’ve ever created.
I call it The Blanco—my muFin base that transforms into multiple flavors and formats.

From this single recipe came 7 Grain Army’s staples:

  • Blueberry Oat

  • Lemon Millet

  • Multigrain Coffee Cake

Because we were 7 Grain Army, every muFin highlighted an alternative grain with its own identity. Everything was gluten-free, dairy-free, and often vegan—eggs were the exception.

This base isn’t just a muffin mix.
Turn it into a cake, layer it with jam or frosting, and you’ve got dessert handled. Waffles, pancakes in the morning are quick as the batter can hold for several days in the fridge.

The Most Ultimate Blueberry muFin:

I never wanted to feel like the Chef in Casino where Robert De Niro demands the same amount of blueberries in every muffin.

My solution?

First, a Chef’s tip: Toss blueberries in oat flour so they dont sink in the batter. Also, combine them both in small batches, but the real move was this:

A bright blueberry jam made stuffed into the center, no one will ever say, “where’s the blueberries?” when eating these.

For the home version, you don’t need the jam. They are just perfect the way they are.

Blueberry- Cranberry Jam Recipe:

TOOLS: Heavy Bottom Sauce Pot | Candy Thermometer

  • 400 g blueberries (frozen)

  • 225g Palm Sugar Or evaporated cane juice

  • 50g Plum Vinegar (can substitute with more lime juice)

  • 25 g Lime juice (Fresh only)

  • 250 g Cranberries (fresh)

  • 30 g Chia Seeds

  • 3 ea Lime Leaves (prefer fresh, dry OK)

  • 5 g Sea Salt

1) Fruit Prep

Keep blueberries frozen so they release juice when heated.

*If you dont have a food processor, chop cranberries. If you DO have a food processor, save this prep for the end.


2) Build the Base

Add to a heavy-bottomed pot:
• Blueberries
• Cranberries
• Palm sugar
• A pinch of salt

Heat on medium-high until cranberries soften and burst and sugar melts.


3) Acid + Brightness

Stir in:
• Plum vinegar
• Lime juice
• Lime Leaf

Simmer 5–10 minutes to fully break down the fruit.
→ 190–205°F (88–96°C) — gentle bubbling, reducing juices.

The mixture should begin to thicken slightly.


4) Concentrate for Natural Gel

Increase heat to a stronger simmer/soft boil.
Keep stirring to prevent scorching.

→ Target 215–220°F (101–104°C)
This is where the natural pectin from cranberries tightens and the jam thickens.

Hold 2–3 minutes at this temp.


5) Chia for Final Body

Turn heat to low. Stir in chia seeds.
Let cook 2–3 minutes to evenly hydrate.

They will continue to thicken the jam off the heat — do not judge set yet.


6) Finish + Cool

Remove from heat. Let sit 5 minutes so fruit stays suspended.
Stir, then jar while hot.


7) Pulse in food processor

Let cool completely — ideally overnight in the fridge — before judging the final gel.


Texture Goals

• Spreadable, not stiff
• Bright, fresh blueberry flavor
• Natural gel from cranberries + chia
• Glossy finish, full berry structure
