Gluten Free Is Finally Winning

It’s been a long, hard road for celiacs and folks with wheat allergies.

And finally—it’s changing.

Between better gluten‑free flour blends and pioneers of GF baking like The Loopy Whisk, there has never been a better time to bake without wheat. Not that it’s normal by any stretch—just… more options. Better options.

There are a lot of haters. A ton of misconceptions. Plenty of prejudice. Most people just don’t understand—and honestly, most kitchens simply can’t do it safely.

Knowing what I know now, even being in the same room as wheat can trigger some seriously painful reactions for some people.

As a chef, I obsess over solutions—but gluten‑free isn’t something you half‑commit to. You have to do it 100% right, or you shouldn’t do it at all.


This Bread

This loaf is a very straightforward way to understand how gluten‑free bread actually works.

Roll up your sleeves. Get your hands dirty. Learn what the dough is supposed to feel like.

If the dough cracks or feels stiff, it’s going to bake up dry and heavy as a brick. If you hit that sweet spot—super sticky, but with give and pull (elasticity), smooth on the surface—that loaf is going to rise and bake beautifully.

This is a multigrain sandwich bread that actually slices, toasts, and holds a BLT without collapsing.

It’s soft, nutty, slightly chewy, and smells like Sunday morning.

Honestly, I’ve baked thousands of loaves. This ranks among the best aromas I’ve ever pulled from an oven.

Most gluten‑free recipes read like chemistry experiments.

Mine starts like a sauce.
And ends as your new craving.


What I Love About This Loaf

There’s a je ne sais quoi quality to this bread—an aroma and flavor that’s deeply satisfying.

It reminds me of adding a cinnamon stick to bolognese or nutmeg to gnocchi. You don’t taste the spice, but something is there that keeps pulling you back in.

That’s the beauty of teff and sorghum.

Sorghum is mild, slightly sweet, and incredibly versatile. One of my favorite sweeteners is pure sorghum syrup. You can even buy popped sorghum as a snack. If gluten‑free had a whole‑wheat cousin with superpowers, this would be it.

Teff is dark, rich, and soulful—with deep history. A little goes a long way when you want intentional flavor and texture that gives back. It’s also one of the most nutritious grains out there, best known for injera, the Ethiopian spongy flatbread used to sop up stews.

And the true star of gluten‑free bread?

Psyllium husk.

This is the glue. The stretch. The structure. It’s what makes GF bread feel like real bread instead of a crumbly science project.

  • Psyllium + flax create a natural dough net—trapping steam for rise while locking in moisture.

  • Teff + sorghum add minerals and depth, so it tastes like bread—not a rice cake.

  • Olive oil + date syrup bring elasticity and color without gums or excess sugar.

It’s bread you can actually chew.

  • Toasted with olive oil or salted butter (I love it with hummus and tuna salad)
