My Blessing, My Curse, and Why I Created Bake Like A Cook
I have a blessing and a curse:
I have a super nose.
I can literally smell doneness.
Cakes, muffins, rolls, breads — I know exactly when they’re ready without timers, calculations, or anxiety. It’s instinctual. Weird. Freakish. Useful.
That same sensitivity means I can smell BO from half a block away, taste the cigarette someone lit before stepping on the subway, and get overwhelmed by rooms that are too hot, too loud, or too chaotic.
I’m a highly sensitive person, especially to my surroundings.
But in the kitchen?
That sensitivity turned into a superpower.
Chefs cook with all five senses
If you’ve ever worked with a great chef, you know this:
They have eyes in the back of their heads.
They hear the wrong sizzle from across the room.
They smell an over-char before it’s visible.
They can taste what’s missing before the plate even hits the pass.
As a chef, you’re expected to know everything — all the time.
That’s not arrogance.
It’s survival.
And that instinct… that sensory intelligence… is exactly why I created Bake Like A Cook.
**Baking shouldn’t be one-note
(And sugar shouldn’t be the lead singer)**
Most baking today is predictable:
White sugar.
White flour.
Eggs.
Cheap vanilla extract.
Maybe scallions and cheddar to “jazz it up.”
That’s not what you’re getting here.
I despise sugar. I use it like a spice, not a personality.
I lean on coconut palm sugar, maple, and coconut sugars because they bring flavor, not just flat sweetness.
I build my recipes around:
• Aromatics
• Natural oils
• Texture
• Soul
• Memory
• Craving
If something is “pretty,” I’m suspicious.
Food should be beautiful, satisfying, craveable — not just photogenic.
My recipes focus on:
• Flavor first
• Texture second
• Soul always
Food should make you feel something, remember something, share something — not remind you of some abstract “perfect baking” fantasy that never meant anything anyway.
**What 30 years in kitchens taught me
(and what the last 15 taught me about people)**
I’ve cooked professionally for three decades — from artisan breads to wellness pastries — and I started out running kitchens as a savory chef.
But the last 15 years, as an entrepreneur trying to find my voice, is where everything changed.
I learned that when I share why I cook the way I do, people finally connect.
When I create recipes that help people build a healthier relationship with food, people don’t just cook — they grow.
And when I teach instead of perform, everyone wins.
Real talk: I haven’t eaten in a “nice” restaurant in 10 years
Not because I don’t want to.
Because I couldn’t afford to.
Meanwhile, I opened a concept in a neighborhood where rent was 4x my own. I couldn’t even afford to hang out there.

Most of the staff can’t afford to live anywhere near them.
Small business owners?
Most are hanging on by a thread.
This industry is collapsing, and the only way forward is to think differently.
My other superpower: sensing when your business is burning
I can smell when your cookies are done…
…and when your business model is about to set itself on fire.
When I walk into a café, bakery, or restaurant, I instantly see:
• Bottlenecks
• Waste
• Blind spots
• Opportunities
• The “working” system that’s secretly killing growth
Everyone loves what’s familiar.
Everyone thinks, “If it ain’t broke, don’t fix it.”
But here’s my motto:
“If it works, BLOW it up.”
Because what used to work is the most dangerous trap of all.
Comfort kills creativity.
Momentum dies when you stop evolving.
Reactive businesses fail.
Proactive businesses thrive.
Same in food.
Same in creativity.
Same in life.
