A cleaner, smarter, faster way to get that cinnamon roll experience — without pretending gluten free dough can act like brioche

This is the gluten free version of today’s cinnamon rolls.
Except here’s the truth: Most GF dough doesn’t want to be rolled.

So instead of fighting the dough, I use the same method I rely on for all my GF Breakfast Buns and GF Danishes — a method that gives you structure, height, softness, chew, and that perfect gooey center.

You build them in a muffin-top pan.
Layer a scoop of batter.
Drop in a cinnamon-maple filling.
Top with a lil more dough
Bake.
You get something that eats like a cinnamon roll… without forcing a GF dough to do gymnastics.

I also add chopped pecans. They bring texture, warmth, and a subtle crunch the classic version can’t touch.
