The Waffles That Almost Didn’t Happen
This started as leftovers.
BLANCO is the most aromatic, light, cake-like batter I make. It becomes fancy layer cakes, elevated muFins like my Multigrain Coffee Cake or Lemon Millet MuFins, quick breads, pancakes, and now waffles.
It also happens to be gluten free, dairy free, and packed with gut-friendly additions that feel good to eat, not heavy or sugary.
I made a batch of blueberry muFins for a few old customers and ended up with about a pint of batter left over. I shoved it in the back of the fridge thinking I’d either toss it or fold it into the next batch.
Then I woke up craving waffles.
I also had extra egg whites sitting in a jar from cookie testing over the weekend.
How convenient…
A little tip If you want extra lift in your pancakes or waffles, whipped egg whites are the move. They give you real puff and structure without adding more leavening. As a bonus, you get a little protein bump too.
So I whipped the whites, folded them into the leftover BLANCO batter, tossed in some more blueberries, and heated the waffle iron.
That’s it.
The result was fluffy, crisp-edged, tender waffles that tasted like clouds of joy but ate like breakfast. No new recipe. No extra mess. Just using what was already there.

Build the wet base
Combine the dry ingredients
Fold in yogurt to finish
That’s it.
The real power is how it fits into real life.
You can make the wet and dry base ahead of time and freeze it in zip-top bags. Pull one out and you can have muFins, pancakes, waffles, or cake on the table in about an hour.
Even the finished baked goods freeze beautifully.
This is not a one-off recipe. It’s a system. One batter that adapts to how you cook, how you eat, and how much time you actually have.
It took me more than 25 years of baking and cooking to land here.
And it’s truly one of my favorite recipes I’ve ever created.

BLANCO Waffle Method (No New Recipe Required)
This works with leftover BLANCO batter straight from the fridge.
What you need
About 1½–2 cups prepared BLANCO batter
1-2 egg whites
Blueberries or other add-ins (optional)
Hot waffle iron
Method
Preheat your waffle iron fully. Hot matters here.
Whip egg whites till it’s a fluffy and stiff foam
Gently fold the whipped whites into the BLANCO batter.
Fold in blueberries or add-ins if using.
Lightly grease the waffle iron.
Spoon batter in. Close. Do not peek.
Cook until deeply golden and crisp.

Pro Tips
Cold batter is fine. Do not overmix once whites are added.
Crisp comes from heat and patience, not extra fat.
These freeze well. Reheat straight in a toaster.
